The two sides have until Monday the 17th to come to an agreement on a long-term contract extension.
So as we approach the deadline, here's what to look for:
Most likely outcome:

While a happy ending where Saquon Barkley get's his long-term deal and the Giants lock up arguably their best player would be nice, according to NFL executives, that's wishful thinking.
Dan Graziano of ESPN recently sat down with some execs across the league, and the majority of them said they would "do nothing" in this scenario and just let Barkley play on the tag (if he signs) or bet on himself if he sits out:
More than one executive insisted they would just franchise both guys (Barkley and Jacobs) this year and, if they play well and stay healthy, franchise them again next year -Graziano

And while simply sitting by and watching things happen may be the best business move, the NFL is still a people business, with emotions, locker rooms, and ownership to consider.
The Giants seemingly stuck gold with their hires of Brian Daboll and Joe Schoen last season. They went to and won a playoff game, made strong selections in their two drafts, and signed Daniel Jones to a team-friendly deal.
All of that can be undone if they don't tread carefully with the Saquon situation, especially after setting the precedent of paying other homegrown talents like Jones, or Dexter Lawrence this offseason.
So when push comes to shove over the next seven days, I expect a deal to get done. Giants owner John Mara has a special loyalty to his players, with Barkley assumingly atop that list.
So while the two still remain at an impasse, I anticipate the Giants blink first, and Saquon gets the deal he deserves.
